🥘

Ingredients

  • 12 slices deli turkey breast (about 12 oz), thin-sliced
  • 6 slices provolone cheese, halved
  • 4 oz cream cheese, softened
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh chives, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 red bell pepper, cut into thin strips
  • 1/2 cucumber, cut into thin matchsticks
  • 2 cups baby spinach leaves
  • 1 tablespoon everything bagel seasoning (optional, for topping)
👨‍🍳

Instructions

  1. 1

    Make the Cream Cheese Spread

In a small bowl, combine the softened cream cheese, Dijon mustard, fresh chives, garlic powder, and black pepper. Mix with a fork or spatula until smooth and fully combined. Taste and adjust seasoning if needed.

  2. 2

    Lay Out the Turkey Slices

On a clean cutting board, lay out 3 turkey slices slightly overlapping each other to form a rectangle approximately 6 inches wide by 8 inches long. Repeat to create 4 total turkey bases.

  3. 3

    Add the Cheese Layer

Place 3 halved provolone cheese slices in a single layer over each turkey base, leaving about half an inch of turkey exposed around the edges.

  4. 4

    Spread the Cream Cheese Mixture

Divide all of the cream cheese mixture evenly among the four provolone-covered turkey bases, using one-quarter of the mixture for each roll. Spread it in a thin, even layer with the back of a spoon, including a little along the far edge to help seal the roll.

  5. 5

    Add the Vegetables

Arrange a small handful of baby spinach leaves across the cream cheese layer. Place 3–4 strips of red bell pepper and a few cucumber matchsticks horizontally across the near edge of the turkey base — these will be at the center of your roll.

  6. 6

    Roll Tightly

Starting from the edge nearest the vegetables, roll the turkey base tightly away from you, tucking the vegetables in as you go. Roll all the way to the far edge and press gently to seal. The cream cheese will act as an adhesive.

  7. 7

    Slice and Garnish

Using a sharp knife, slice each roll into 3–4 pinwheel rounds, about 1.5 inches thick. Arrange on a serving plate cut-side up. Sprinkle with everything bagel seasoning if desired.

  8. 8

    Serve or Store

Serve immediately at room temperature, or refrigerate in an airtight container for up to 3 days. If meal prepping, keep the rolls whole and slice just before serving to prevent the edges from drying out.

Chef's Tips

For even more protein, swap provolone for Swiss or pepper jack cheese, both of which are slightly higher in protein. Use thick-cut deli turkey (not ultra-thin) for rolls that hold together better. To keep cucumber from making the rolls soggy during meal prep, pat the matchsticks very dry with paper towels before adding them. These roll-ups also work great with smoked turkey or even deli chicken breast as a variation.
