👨‍🍳

Instructions

  1. 1

Prepare the beans and baking dish

Heat the oven to 375°F (190°C). Use 1 teaspoon of the measured butter to grease a 2 1/2- to 3-quart baking dish, about 9 by 13 inches. Trim and cut the green beans, slice the mushrooms, mince the garlic and measure the other ingredients. Bring a large pot of unsalted water to a boil while preparing the vegetables; allow about 20 minutes for this preparation.

  2. 2

    Blanch and drain the beans

Add the green beans to the boiling water. Cook for about 5 minutes after the water returns to a boil, until bright green and just tender with a slight bite. Drain thoroughly in a colander and let steam dry while making the sauce. Allow about 8 minutes including returning to a boil and draining; thicker beans may need another minute or two. Do not rinse or leave water clinging to the beans.

  3. 3

    Make the mushroom cream sauce

Melt the remaining measured butter in a large deep skillet over medium-high heat. Add the mushrooms and cook for about 8 minutes, stirring, until their released water evaporates and they begin to brown. Reduce the heat to medium, add the garlic and cook for 1 minute. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and vegetable broth, then add all the thyme, salt and pepper. Bring to a gentle simmer and cook for about 5 minutes, stirring, until the sauce coats a spoon. Allow about 17 minutes for this step including adding the liquids; do not let the milk scorch.

  4. 4

    Assemble and bake

Fold the drained green beans and 1/2 cup (28 g) of the crispy fried onions into the mushroom sauce. Spread evenly in the prepared dish. Bake uncovered for about 20 minutes, until bubbling around the edges and hot in the center. Scatter the remaining 1/2 cup (28 g) onions over the top and bake for about 5 minutes more, until golden; check early so the onions do not burn. The center should reach 165°F (74°C) on a food thermometer; extend the baking time if needed. The planned cooking time is 50 minutes: 8 minutes blanching and draining, 17 minutes sauce preparation and 25 minutes baking.

  5. 5

    Rest and serve

Let the casserole stand for 5 minutes so the sauce settles, then divide the entire dish into eight side portions. Serve alongside a main course. The planned 75-minute total includes 20 minutes preparation, 50 minutes cooking and 5 minutes standing; heating and bean tenderness may extend it.

Chef's Tips

This is a side dish, with eight portions per casserole. Fresh green beans need blanching before baking; canned beans have a different texture and are not a direct substitution here. Thorough draining and cooking the mushrooms until their liquid evaporates help prevent a watery sauce. For make-ahead preparation, blanch and drain the beans and make the sauce up to 1 day ahead, cool promptly in shallow containers and refrigerate separately at 40°F (4°C) or below. Keep all crispy onions dry and separate. At serving time, combine the chilled beans and sauce with half the onions, cover and bake at 375°F (190°C) until the center reaches 165°F (74°C), allowing roughly 35 to 45 minutes rather than the fresh assembly timing. Uncover, add the remaining onions and bake about 5 minutes to crisp them; this extra time is not included in the fresh recipe total. Contains milk and wheat; packaged onions and broth may contain soy or other allergens, so check labels. Vegetarian when the broth and onions are vegetarian. Nutrition is estimated per one-eighth batch, about 180 calories and 320mg sodium, using typical whole milk, butter and packaged fried onions; brands can change the estimate, especially sodium and fat. Accompaniments are excluded. Refrigerate leftovers in shallow containers within 2 hours and use within 3 to 4 days. Reheat to 165°F (74°C); the onion topping will soften during storage. This recipe has not been kitchen-tested; use the texture and temperature cues.
