- 1 teaspoon dried Mexican oregano
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 2 tablespoons apple cider vinegar
- 4 cups beef broth
- 2 bay leaves
- Salt and black pepper to taste
- 18 small corn tortillas
- 1 1/2 cups shredded Oaxaca cheese (or mozzarella)
- 1/2 cup white onion, finely diced (for topping)
